The Australian Southern Rock Lobster, scientifically known as Jasus edwardsii, is a highly prized species of lobster found in the southern waters of Australia, including the coasts of South Australia, Victoria, Tasmania, and parts of New South Wales. It's also known as the Southern Spiny Lobster or simply "crayfish" in Australia, although it's technically not a true crayfish.


The meat of the Southern Rock Lobster is considered a delicacy, known for its sweet and firm texture. It is often served grilled, steamed, or boiled, and can be used in a variety of dishes from simple lobster tails to more elaborate preparations.
